If you've ever been to Mexico, you know that the weather is perfect, the people are warm and wonderful, the beaches are fabulous and the food is, for the most part, fresh out of the sea and very unique. I've had the opportunity over the past two years to visit various locations in Mexico with my personal favorites being San Jose del Cabo and Todos Santos. San Jose del Cabo is a beautiful city on the Sea of Cortez with a very quaint downtown area that includes art galleries, restaurants, churches and fishing. I have learned to enjoy fishing and can add "having caught a 142 pound blue marlin" to my resume. Not an easy task as it took an hour to reel it in, but we did a catch and release. Todos Santos is where the infamous Hotel California is located and YOU all know my passion for the Eagles. But here's the MAIN reason why I love Mexico. Recently I was enjoying a fine dinner at a Cabo San Lucas restaurant when the server brought the dessert menu. I thanked him but told him that I was "trying to lose a few more pounds". He looked at me with a puzzled look and said, "Oh no, you are the PERFECT WOMAN." It took me a few minutes to "digest" (there I go with another FOODIE WORD) what he had said and then realized the importance of that earth shattering statement. I'm not fat - I'm living in the WRONG COUNTRY!!!! Ah............that's why I love Mexico. Take it easy. Carolyn aka Soon to be EX PAT!!!!!!!
